- Egg (One)
- Greek Yoghurt (Three tablespoons)
- Green Peas (One tablespoon - pre-cooked)
- Carrot (One tablespoon - grated)
- Baby Marrow (One tablespoon - grated)
- Parmesan Cheese (One tablespoon - grated)
- Salt (1gm)
- Flour (One tablespoon)
- Puff Pastry
- Olive Oil
- Cherry Tomato (Half - peeled)
- Mushroom (Three slices)
Preparation
As your hats and aprons are on, get ready to prepare a delicious Vegetable Quiche. This recipe uses fresh, organic, vegetables and a creamy filling, all encased in a golden puff pastry.
- Preheat your oven to 180°C
- Spread one tablespoon of flour onto a cutting board to prepare for the pastry not to stick. Roll out the puff pastry and line 6-7cm pie dish with it. Trim off any excess pastry hanging over the edges. Prick the base with a fork to prevent it from puffing up during baking
- Grate the carrot, baby marrow and cheese using a rotary grater
- In a large bowl, whisk together the egg, greek yogurt, salt and cheese until well combined
- In the mix add grated vegetables and pre-cooked green peas, and stir with a spoon
- To avoid the pastry sticking onto the mould add a bit of olive oil or use non-stick moulds
- Pour the mixture into the prepared puff pastry and make sure that you leave space at the top
- Add three slices of mushroom and peeled half cherry tomato on top to decorate the quiche
- Bake in the preheated oven for about 15 minutes, or until the quiche is set and the crust is golden brown
- Allow the quiche to cool for a few minutes before serving
